Garlic and green onion buns





Here is another great way to incorporate garlic into something simple and delicious.
Recipe adapted from Baking Serendipity.


Ingredients:

3/4 cup warm water
1 egg
2 tsp bread machine yeast
2 1/3 cup bread flour
1/2 tbsp salt

3 cloves garlic, chopped
2 sprigs green onions, chopped
3 tbsp vegetable oil

1 egg for egg wash

Mix water, egg and yeast and let bubble for 5 - 10 mins. Add in bread flour and salt and mix. Proof for a few hours until at least doubled in size.

Saute garlic and onions in oil over medium low heat, making sure the garlic does not get too browned. Set aside to cool.

Knead garlic mixture into dough for a good 7 - 10 minutes, until very well incorporated and dough feels smooth and bouncy. Let proof again until doubled in size.

Roll out dough and cut into 8 equal pieces. Roll each piece into a long slab and cut 4 strips length-wise and braid. Join the ends together with a slight twist and pinch to make a bun shape. Alternatively, you can roll each piece into a nice round boule shape. Let rest in oven with water bath for 1 hour.

Preheat oven to 430 F. Brush the top of each bun with egg wash and bake for 15 - 20 mins until golden brown.
