Lemon Parmesan Boule



Wandering into the kitchen..... Sniffing around.....Lemons sitting on the table...... open the fridge.... ooh! Cheese! *poke poke* And the dough seems ready. OK, Lemony parmesan bread it is!

That was my thought process prior to the creation of this bread. The lemon zest pairs well with the strong cheese in this bread, making it delightful for a scrambled egg sandwich!

Ingredients:
2 tsp bread machine yeast
230 mL warm water
1/2 tbsp salt
2 1/2 cups bread flour

3 tbsp Parmesan cheese, grated
zest of 1 Meyer lemon

Mix yeast into water and let bubble for 5 mins. I used a bread maker to do all the mixing and proofing, just use the 'mix' setting only then turn off and close the lid to let it proof. Add in flour and salt and mix until homogeneous. Let proof for a few hours.

Turn dough out on to floured working surface. Add in Parmesan and lemon zest and knead ingredients into dough. Knead for about 5 mins. Shape into boule. Let proof in oven (make sure it is off!) for about 1 - 1.5 hours until it has doubled in size.

Preheat oven to 415 F and bake for 25 - 30 mins.

The next morning, I used this lovely bread as a vehicle for some scrambled eggs and tomatoes.

  1. This looks so rustic its perfect. Makes me want to break bread with both hands :) Can't wait for Australian Summer, this bread makes me want to go on a picnic.

  2. I love all the bread that you make. I wish I have the skill to do the same. :-) Looks delish! Do you use bread machine for all your breads? Or is it just certain kinds of bread? Have been thinking about getting one but I need some advice.

    1. A Bread machine is a great way to start - usually manufacturer's instructions are very straightforward and results and consistent. But if you have a mixer, you can do a lot more with it :)
