Flaxseed bread

This is a hearty and reliable bread, excellent for sandwiches!

1 1/4 cup warm water (or soy milk or milk)
1 tsp bread machine yeast
3 cups bread flour
1/2 tbsp brown sugar
1 tsp salt
1 tbsp flaxseeds (optional)

Add yeast into warm water and let bubble for 5 - 10 mins. Add flour, sugar, salt, and flaxseeds and mix until smooth. Let dough proof for a few hours until at least double in size.

Deflate dough and knead, let proof again for a few hours.

Deflate dough again and divide into two long loaves onto baking sheet. Score surface with knife. Proof for at least 1 hour in the oven with a pan of water inside to increase humidity.

Preheat oven to 380 F and bake for about 20 - 25 mins (may be longer if shape is round and tall) until it sounds hollow when tapped.
